Wisconsin WI-PIE

Greetings and Salivations fellow Wisconsin food fans. Nope not gone, just busy. So, just wanted to share a food quickie with everyone so you know we are still alive and kicking. Hosted a Wisconsin style Packer party recently and had to come up with a menu that was not only fast but would also appeal to a house full of Sunday afternoon Packer fans whose idea of "gourmet" is beer poured in a glass. Here's what I came up with...

Pizzazz WI-Pie



Ingredients Needed: for one wi-pie

Extra thin and crispy pre-made pizza crust. (not refrigerated type)
1/4 lb. smoked gouda cheese
6oz. package of Prosciutto
1/4 lb. portobello mushrooms
1/8th pound mozzarella cheese
1/4 cup olive oil
Fresh chopped garlic
1 small roma tomato
1/2 small red onion
4-6 fresh basil leaves

Directions:
Pre-preparation: 2 hours before planned cooking time combine two shredded basil leaves and chopped garlic with olive oil. For more flavor, marinate 24 hours in advance.

Begin by placing pizza crust on your pizza pizzazz and brushing with light olive oil mixture. Next add mozzarella cheese and prosciutto. Set  pizzazz timer for 20 minutes with both upper and lower heating elements turned on. Let cook for 5 minutes and then add mushrooms and half of the smoked gouda cheese crumbles.  When timer reaches 10 minutes, shred and add remaining basil leaves, chopped red onion and thinly sliced roma tomato strips. Cook until crust is crispy and cheese is bubbly and beginning to brown about 20-25 minutes. Enjoy!!
